Honey Plum Focaccia

Are you ready to level up your baking game with a treat that’s as beautiful as it is delicious? Behold! My latest obsession: Honey Plum Focaccia.  It’s the ultimate sweet-and-savory treat that’s perfect for showing off your baking skills (even if you’re just starting out!). This soft, golden bread is topped with juicy, caramelized plums, and honey, and balanced by fresh rosemary, and lots of delicious flakey sea salt. It’s basically a warm summer day on a plate, and trust me, you’re going to want to make this. 

 

Now, I know what you’re thinking, this sounds like something straight out of a fancy bakery.  But it is super easy to make, even if you’re not a pro baker. With just a few simple ingredients and a little bit of love, you’ll have a stunning, flavorful bread that’s sure to impress anyone who tastes it. Whether you’re planning a brunch with your girlies, a cozy dinner at home, or just want a sweet snack to brighten up your day, this focaccia is going to be your new fave.  Plus, it’s totally Instagrammable, and guaranteed to impress. 

Ingredients:

Dough Ingredients:



 

3 1/2 cups all-purpose flour

1 1/2 cups warm water

2 1/4 teaspoons active dry yeast

2 tablespoon honey

2 tablespoons olive oil

1 1/2 teaspoon salt (I used Celtic salt)

1 sprig of rosemary, chopped 

 

Extra olive oil for the bowl

 

Topping Ingredients:

 

2 red plums, sliced

Honey for drizzling

Fresh rosemary

Flakey sea salt for sprinkling

Instructions:

  

  1. In a bowl, combine your warm water (110 F), honey, and active dry yeast, and let it sit for about 5-10 minutes, until your mixture becomes frothy.
     
  2. In a large mixing bowl, or in your stand mixer bowl, add in your flour, rosemary, and salt, and mix to combine. Then make a well in the center, and pour in your yeast mixture and olive oil.  Mix until a dough forms, then knead on a floured surface, or in a stand mixer for about 8-10 minutes, until your dough is smooth and elastic..  
     
  3. Place your dough in a greased bowl, and cover with a damp cloth or plastic wrap, and let it rise in a warm place for 1-3 hours or until it doubles in size. I let mine sit in my oven with the proof function on since I keep my house cold to speed up this process.  I usually check on it after one hour, and punch it down then pull and fold in each corner and flip it over. I also do this after the two hour mark again as well to build up a bit more of the gluten. 
     
  4. Preheat your oven to 400°F (200°C), and grease your baking pan liberally with olive oil.  I used one 9x12 pan. 
     
  5. Coat your hands with a little olive oil, and punch down your risen dough.  Transfer it to your prepared baking pan. Press the out evenly until you reach the edges.  You can add a bit more olive oil to the dough or your hands if it’s sticking.  This may take a few tries, since the dough will shrink a few times. That's ok, just let it rest for a moment, and then spread it again.

    6. Now top your dough with your sliced plums and fresh rosemary. Then drizzle and sprinkle as much honey and flakey sea salt as you like. 

    7. Bake in your preheated oven for 20-30 minutes or until the focaccia is golden brown.  Then let it cool slightly before slicing.

    8. Serve and enjoy!
